This is one of our healthy recipe makeovers. It was a hit tonight, so I thought I'd pass it on.
3 large sweet red peppers
1/2 lb lean ground turkey
1/2 c chopped onion
1 tbsp dried parsley
3/4 tsp salt (I used garlic salt)
1/4 tsp cayenne or chili powder
1/8 tsp all spice
18 oz can Tomato sauce (I used a smaller can and it worked well)
1/4 c Chicken broth
2 tsp balsamic vinegar
1 1/2 tsp chopped basil
2 tbsp grated parmesan or romano
Cut tops off peppers, remove seeds and place upside down on microwave safe plate. Add a little water and cover. Microwave on high until crisp tender (about 5 minutes)
Cook onion and turkey until no longer pink. remove from heat. Add seasonings.
Add remaining ingredients.
Place peppers in greased (pam) baking dish and fill. Bake in 350 degree oven about 30 minutes.

Dinner tonight was fantastic., Taylor is in love with the cookbook, so he chose breakfast for dinner tonight and made us scrambled eggs with salmon and avocado Don't let the simple name fool you-it was spectacular!
5 large eggs
1 cup heavy cream
fine sea salt
1 TBS butter
2 oz thin sliced smoked salmon
1/2 ripe avocado
hot pepper sauce
Eggs, cream and salt are whisked until smooth. Butter is melted in pan until foaming. Eggs are added and gently cooked. Cooked eggs are arranged over avocado and salmon. Garnish with hot sauce.

Some things are worth remembering
2 cans chicken, drained
1 package cream cheese, softened
½ cup blue cheese dressing
½ cup ranch dressing
¾ cup buffalo wing sauce (Frank’s Red Hot wing sauce)
½ cup blue cheese crumbles
1 cup shredded cheddar cheese (reserve some to put on top)
Soften cream cheese, add dressings, sauces, and cheeses, then chicken. Bake at 350 for 30 minutes.

Peanut Butter Bars
From a friend's blog.

Crust:
8 medium-sized butter or chocolate chip cookies
1/4 cup butter, melted
Chocolate Layers:
2 1/2 cups milk chocolate chips (15 oz. package)
Peanut Butter Filling:
1 1/2 cups creamy peanut butter
1/2 cup butter, softened
3 cups confectioners'/icing sugar
2 tsp. pure vanilla extract
Preheat oven to 325F.
In food processor or blender process cookies until finely ground. Add butter and mix together completely. Press crumb mixture into bottom of 8 x 8 baking pan and bake 10 minutes.
Melt chocolate in double boiler over slightly simmering water. Or microwave the chocolate, stirring every 30 seconds until completely melted. Pour half of the melted chocolate into pan and smooth evenly over crust. Place pan in refrigerator. Keep remaining chocolate warm.
To prepare the peanut butter filling, blend peanut butter and butter together until smooth, using a food processor or electric mixer. Slowly beat in icing sugar and then add vanilla. Beat until smooth. Spread peanut butter filling over the chilled chocolate layer. Finish by pouring remaining warm chocolate over filling and spreading smooth.

Living to Eat or Eating to Live?
I love listening to grandma tell me about the things she is coming up with for dinner. My good intentions to re-create her masterpieces never come to fruition, but I would still love some of the recipes. Maybe one day I'll cook again in earnest. I showed Grandpa how to make a blog post, maybe someone could show Grandma, too? please? (I waited until the last minute for the instruction and Grandma was packing.)
I wish I'd had a tape recorder with me so I could preserve Grandma's food genius. Any else have family food stories they'd like to share? I'd love to hear them. And, since this family has a sense of genius in the kitchen, for the rest of the summer everybody add as many new recipes (or new to the rest of us) that you try. I know you have them, it's the busy factor that's the question.
Here's one we invented a few months ago.

Somebody -help
Here's a recipe from a friend in Scotland. Somebody needs to try this and convince me that it's not fantastic so I won't get hooked and have my diet side tracked. Please. I have no will power. The only thing keeping me from making them right now is the thought of going to the grocery store to get everything and cleaning it up. Wow, am I lazy today or what? Who knew slothfulness had it's up side?
